literally translates to "earth smell", is an organic compound with a distinct earthy flavour and aroma, and is responsible for the earthy taste of beets.

derive from an oil exuded by certain plants during dry periods, whereupon it is adsorbed by clay-based soils and rocks. During rain, the oil is released into the air along with another compound, geosmin, producing the distinctive scent.

My coffee table is a big slab of shale that I found out in the forest, and I can get that rain smell just by sprinkling some water on it.
